Braised Abalone, Sea Cucumber and Mushrooms Recipe.

This is one of the new year dish that is deliciously savored. I am delighted to share this prosperity and wealth symbolizing dish to you. Abalone also symbolizes tales of gold. Together with Sea cucumber and mushrooms it is also nutritious and healthy as well. You can refer to links at bottom of page for more info on ingredients.

Yummy Taste of Dish

Abalone is tender, sea cucumber is soft and chewy, mushrooms is crunchy and juicy. The braising sauce and spices are absorbed into these 3 ingredients, making it fragrant and tasty.

This dish is so easy to cook as its used ready made braising sauce and spices powder. Below list the ingredients for the sauce and spices.

Ingredients of braising sauce : Water, Soya Bean, Salt, Sugar, Caramel, Wheat Flour and Spices etc.

Ingredients of spices powder consist of Angelica, Pepper, Wolfberry fruit, Szechwan Lovage Rhizome, Liquorice, Star Anise, Spices, salt, sugar  etc.


Ingredients :

– 8 pieces of fresh frozen abalone
– 3 pieces of sea cucumber
– 15 pieces of dry mushrooms
– 5 pieces of ginger
– 10 cloves of garlic (crushed)
– Braising sauce : 3 tabsp
– Spices powder : 1 tbsp
– Mirin (or rice wine) : 2 tbsp
– Water : 300 ml
– Cooking oil
– Salt and seasoning to taste
– Sauce thickener: 2 tbsp of tapioca flour (or corn flour) mix with 50 ml of water




Before cooking :

(1) Soak dry mushrooms until they are soft, remove stems.

(2) If abalone have shells, lift out abalone flesh from the shells with a small knife, then remove intestines and wash well.

(3) Thoroughly clean and  remove remains from insides of sea cucumber. Cut them into bigger pieces, as they easily shrink after cooking.

Cooking method:

(1.) Heat up pot with 2 table spoons of cooking oil, add in ginger slices and crushed garlic, stir fry until fragrant.

(2.) Add in all the ingredients, add 4 table spoons of braising sauce, 1 table spoon of spices powder and 2 table spoons of mirin (or rice wine), Stir fry and mix all ingredients evenly.

(3.) Take out and set aside sea cucumber as they easily shrink and become soft after cooking together with the other ingredients.

(4.) Add in 300 ml of water. Cover Pot and simmer for 20 minutes. Return sea cucumber and simmer for another 5 minutes. Add salt and seasoning to taste.

(5) Thicken sauce : After cooking, drain sauce into another pot, heat up the sauce and slowly add in flour mixture, stir constantly until desired thickness of sauce.


(6)  Add the flavorful braising sauce on to the abalone, sea cucumber and mushrooms before serving.

Simple steps
(1) Place varieties of ingredients in the pot, fill in boiling water, continue to cook the ingredients.

(2) Once the soup boils and the ingredients cooked, its ready to serve.

Chili Sauce made with ready made sauces and fresh ingredients:
To savor the hot pot, mix the following ingredients in a bowl.
– Lemon Chili sauce : 3 tbsp
– Sweet chili sauce : 3 tbsp
– Lime juice and lime peel : (from 4 limes)
– Cane sugar : 2 tbsp
– Sesame oil : 2 tbsp
– Sesame seed : 1 tbsp
– Parsley : 2 stalks finely chop

Nothing could be more happier than to hear from my mum that the Chili Squid Recipe I cooked is exactly the same taste that my grandmother cooked for her.

This is a simple recipe which requires only chili Paste, shallots and garlic for this dish.

Recipe of Chili Squid

Ingredients :
– Squid : 500 grams (Cut into rings or pieces as desired)
– Chili paste : 2 tbsp (add amount as desired)
– Shallots and Garlic : 5 cloves each (or 2 tbsp after finely chopped)
– 2 Onion (Cut into rings)
– Cooking oil : 3 tbsp
– Salt and sugar to taste
– Garnish with parsley

Simple Steps:

Heat up pan with oil, add in ingredients accordingly and stir fry until fragrant : – Firstly, add in finely chopped shallots and garlic, stir fry, follow by chili paste, onion, stir fry mixture evenly, finally add in squid and stir fry until it is cooked.

Baked Mushroom and Veggies With Avocado Dressing

Ingredients :
– White button mushroom (sliced)
– 3 Tomatoes (cut into wedges)
– Broccoli (cut into florets)
– Cauliflower (cut into florets)
– Extra virgin olive oil : about 5 tbsp
– Salt (1/2 tsp)
– Black pepper (1 tsp)

Baking this Recipe :
(1) Scald cauliflower and broccoli florets in hot water, drain water and set them in a baking dish.

(2) Add in tomatoes and sliced button mushroom to the scalded veggies.

(3) Sprinkle olive oil, salt and black pepper.

(4) Bake at 200º C for 15 minutes or until preferred browning.

Recipe of Layered Spring Onion Omelette 

Ingredients: Spring Onion, Eggs, Capsicum, Salt and pepper (to taste).

Method : Add beaten eggs with all ingredients, fry layer by layer in half rounded shape until all the egg mixture is used up.

Method for cooking layered Spring Onion Omelette: 

(1) 1st layer is round shape, heat up oil in pan, add in egg mixture, when it is almost cook, flip it into half round shape.

(2) 2nd layer : add egg mixture into the pan, when it almost cook, flip the other half round shape over.

(3) Repeat the 2nd step until the egg mixture is used up.

Fragrant and Spicy Sambal Chili Chicken Recipe

Hi Dear Friends, few ingredients are needed for this easy way to cook Sambal chili chicken recipe. That is the beauty of this dish. It is very tasty with fragrance of spices. One of the main ingredients is sambal. For this recipe, sambal is made with ready made chili paste, shallots, garlic, ginger, candle nut, lemon grass and oil.

What is Sambal?

“Sambal is sauce typically made from a variety of chili peppers and secondary ingredients such as shrimp pastefish saucegarlicgingershallotscallionsugarlime juice, and rice vinegar or other vinegars.”

This combination of ingredients gives a strong fragrance with spiciness that pamper your taste buds. It can be eaten with rice, wheat wraps etc.. Enjoy this recipe friends.

Fragrant and Spicy Sambal Chili Chicken Recipe

Ingredients :
– 2 Chicken thighs (boneless and skinless) : cut into bite sizes
– 6 shallots
– 4 cloves garlic
– 2 slices of ginger
– 6 candle nuts
– Half stalk of lemon grass
– 1 tbsp of ready made chili paste
– 5 red chilies (optional)
– 6 table spoons of cooking oil
– Garnish with Cilantro

Simple Way of Cooking :

(1) Blend shallots, garlic, candle nuts and lemon grass together with some water. Blend into smooth paste.

(2) Heat up pan with cooking oil, add in blended paste in step 1, chili paste and red chilies, stir fry and mix all ingredients is cooked and chili oil forms.

(3) Add in chicken meat, stir fry and mix all ingredients evenly until the chicken meat is almost cooked (about 2 minutes).

(4) After about 2 minutes of frying,  add in half cup of water, with pan-cover simmer until the gravy boils and chicken is cooked and tender.

Tip: For Step 2, You have to make sure the ingredients are well cooked till they have no raw smell. This ensures that the taste is fragrant.

Baked Asparagus Recipe Topped With Mozzarella Cheese

Ingredients :
– Asparagus (300 grams)
– 2 Bell pepper  (1 red and 1 yellow) : (cut into small pieces)
–  Minced garlic (amount as prefered)
– Shredded Mozzarella cheese (100 grams)
– Few pieces of wheat crackers : (crush into small crumbs)
– Extra virgin olive oil (2 tbsp)
– Salt (to taste)
– Black pepper (to taste)

Simple Way of Cooking :
(1) Scald asparagus in hot water for about a minute. Drain and set aside on baking tray.

(2) On top of asparagus, add in minced garlic. sprinkle olive oil, some salt and black pepper(to taste). Mix the ingredients together.

(3) Next, spread wheat cracker crumbs, follow by capsicum(bell peppers) and mozzarella cheese.

Satay Beef Balls With Peanut Sauce Recipe

Introduce to you my friends, satay beef balls dipped into savory peanut sauce. This combination is absolutely delicious.

Beef balls are made from minced beef. It is oven grilled and this makes it easy to clean up. Traditionally the meat is served on sticks. I came up with idea of making it into shape of balls for a new tasting experience that I hope to share with you.

The fragrance of this beef balls is from mixed spices and marination with lemon juice. When they are dipped into peanut sauce, it is a burst of delicious flavor from beef and creamy yummy taste of peanut sauce.

Satay Beef Balls With Peanut Sauce Recipe

Satay Beef Balls With Peanut Sauce

Ingredients :

Minced Beef : 600 grams

Condiments and Spices for Marinade Ingredients :
Lemon Juice : 5 tbsp
Shallots : 4 pieces
Lemon grass : 1 stalk
Coriander powder : 6 tbsp
Korma Mix : 1 tbsp
Turmeric powder : 1 tsp
Light Soy sauce : 2 tbsp
Corn Flour : 3 tbsp
1 beaten egg white
Sugar : 100 grams
Salt : 1 tsp
Cooking oil : ¼ cup

Note: Korma Mix ingredients are Coriander, Cumin, Fennel, Black Pepper, White Pepper, Cloves, Star Anise and Cinnamon.

For side dishes : 
Lontong (Rice wrap with Banana Leaf)
Canned Pineapple Cubes

Cooking Instructions :

(1) Mix 5 tbsp of Lemon Juice into the minced beef.

(2) Cover water till half of the shallots and lemon grass. Blend into paste.

(3) Marinate minced beef with blended paste and rest of the marinade ingredients. Leave them overnight in the refrigerator (or at least 2 hours in the refrigerator).

(4) Grease the baking tray and  get ready for grilling.

(5) Shape the marinated minced beef into balls, place them onto the greased tray.

(6) Cover with aluminium foil, oven grill at 250 degree C for 20 minutes.

7. After 20 minutes, flip the balls to the other side and grill without foil for 15 minutes or until desired browning.

Ingredients (A)

Candle Nuts : 5 pieces
Garlic : 5 cloves
Shallots : 3 pieces
Lemon grass : 1 stalk

Spice Powders
Coriander Powder : 3 tbsp
Korma Mix : 1tsp
Turmeric Powder : ½ tsp
Chili paste : 1 to 2 tbsp




Other Ingredients :

Cooking Oil : 1/2 cup
Water : 1 cup
Coconut Milk : 200 ml
Sugar : 100 grams
Salt : ½ tsp
Peanut butter with crunchy nuts : 3 tbsp
Fried grounded peanuts : 100 grams

Cooking Instructions :

(1) Cover half of the ingredients with water. Blend into paste.

(3) Add all spice powders and blended ingredients A into ½ cup of oil, stir fry over medium to low heat until fragrant or chili oil is formed.

(4) Add in Coconut Milk, water, peanut butter, sugar and salt, stir constantly until all the ingredients are dissolved and the sauce thickens.

(5) When ready to serve, add in fried ground peanuts.

Spicy Chicken Curry Recipe

Ingredients :
Chicken thigh (boneless and skinless) : 650 grams (cut into bite sizes)
Potato : (cut into bite sizes)
Curry Paste : 200 grams
Chili paste : 60 grams
Lemon grass : 1 stalk (cut into small sections)
Blue ginger : few slices
Few Curry leaves
Cooking oil : ½ cup
Salt and Seasoning to taste

 Simple Way:

(1) Boil and cook the cut potatoes, set aside.

(2) Blend Lemon grass, blue ginger and few curry leaves together with water to half cover ingredients, blend into paste, 3 table spoons of blended mixture required.

(3) Heat up oil in skillet, add in curry paste, chili paste, curry leaves and 3 tbsp of blended ingredients, sauté until fragrant or chili oil is formed.

(4) Add in chicken and boiled potatoes, stir mix all the ingredients evenly, add water to cover the chicken, stir mix well and simmer with cover until chicken is tender and gravy thickens.

(5) Add in salt and seasoning to taste.

Fried Salmon Recipe with Brinjal and Sunflower sprouts

Fried Salmon with Brinjal and Sun flower sprouts

Ingredients :
* Salmon steak
* 3 small brinjal (Cut into halves)
* Sun flower sprouts (wash and soak in ice water)
* Few cherry tomatoes
* Extra Virgin olive oil
* Salt
* Black pepper

Simple Way of Cooking :

(1) Marinate salmon with salt and black pepper for about half an hour.

(2) Heat up cooker with 2 tbsp of olive oil, put in salmon and brinjas, sprinkle brinjal with a pinch of salt and black pepper. Fry until brown on both sides of the salmon and brinjal. Set aside salmon steak and brinjal  in a plate.

(3) Add in cherry tomatoes, simply fry until desire browning. Set aside on the same plate with salmon.

(4) Wash sun flower sprouts and soak them in ice water. Before serving, drain away the ice water, add in some salt and olive oil, mix them and add to the plate
