Healthy and Tasty Fish Maw Soup Recipe
This tasty Fish Maw Soup is cooked with sweet tasting Chicken Soup. Fish maw is soft with healthy collagen.
What is fish maw?
Its Chinese name is 鱼鳔. “The swim bladder, gas bladder, fish maw or air bladder is an internal gas-filled organ that contributes to the ability of a fish to control its buoyancy, and thus to stay at its current water depth without having to waste energy in swimming.”

Fish Maw with chicken soup is sweet delicious and smooth. Together with Crab meat, mushrooms, egg drop ,and goji berries (wolf berries), it is both healthy and tasty. Tapioca flour is used to thicken the sauce and makes it taste smooth. Spring Onions and egg drop further enhance the taste and fragrance.
Ingredients :
Pre-prepared chicken broth : 1 litre
Fish Maw : 200 grams (after soaked)
Dry Mushroom : 80 grams (after soak)
Crab meat : 100 grams
1 beaten egg
Tapioca (or corn) flour mixture : 3 tbsp. of flour mix with 50 ml of water
Salt and Seasoning to taste
White pepper powder
Garnishes
Goji berries (wolf berries) : 10 grams
Spring onions
Before cooking :
(1) Soak dry fish maw until soft, cut into thin strips.
(2) Soak dry mushroom until soft, trim the stem and slice into thin strips.
Steps of cooking :
(1) Reheat the chicken soup, when the soup boils, add in fish maw and mushroom, let it boil for 10 minutes, add in crab meat, mix all ingredients.
(2) When soup boils again, lower the heat, pour in flour mixture bit by bit, stir constantly in one direction until the soup thickens.
(3) Same as step 2, add in beaten egg bit by bit, stir constantly in one direction until the egg drop is cooked. Add in with goji berries (wolf berries).
(4) Before serving, add in white pepper powder, garnish with spring onions.
