– 1/2 of Pumpkin : (sliced)
– Curry leaves
– 2 salted egg yolks
– Cooking Oil – 2 tbsp
– Chillies (optional)
Simple steps :
(1) Steam 2 salted egg yolks with a few curry leaves. When its cooked, replace the curry leaves and use fork to crush the egg yolks, set aside,
(2) Heat up pan with 2 tbsp of oil and stir fry curry leaves till fragrant.
(3) Add in pumpkin slices and 2 tbsp of water, stir fry and simmer with pan cover until pumpkin is cooked. Stir in crush salted egg yolk and mix well.
(Note : Pumpkin easily softens. Always check the tenderness of pumpkin when adding water.)
