Fried Pumpkin With Salted Egg Recipe

No salt or seasonings is added to this pumpkin dish. The salted egg yolk brings out the flavor and the natural sweetness of pumpkin.

Fry Pumpkin-with-Salted-Egg-Yolk-Recipe

– 1/2 of Pumpkin : (sliced)
– Curry leaves
– 2 salted egg yolks
– Cooking Oil – 2 tbsp
– Chillies (optional)

Simple steps :

(1) Steam 2 salted egg yolks with a few curry leaves. When its cooked, replace the curry leaves and use fork to crush the egg yolks, set aside,

(2) Heat up pan with 2 tbsp of oil and stir fry curry leaves till fragrant.

(3) Add in pumpkin slices and 2 tbsp of water, stir fry and simmer with pan cover until pumpkin is cooked. Stir in crush salted egg yolk and mix well.

(Note : Pumpkin easily softens. Always check the tenderness of pumpkin when adding water.)
