Mixed Vegetables Salad Recipe

Introduce to you this colorful and healthy salad which consists of sweet cherry tomatoes, crunchy cauliflower, leafy purple cabbage and green fragrant broccoli.
With just olive oil as dressing and a pinch of salt and black pepper, I enjoyed this flavorful salad with the fragrance, crunchiness and freshness of each type of vegetable.
Its yummy due to seasoning and flavor of extra virgin olive oil. Most importantly, they are grilled to bring out its deliciousness.


Ingredients :
– Purple cabbage
– Broccoli
– Cauliflower
– Cherry tomatoes
– Salt
– Black pepper
– Extra virgin olive oil

Simple and easy way :
(1) Cut vegetables into desired shapes and bite sizes.
(2) Scald the cut cauliflower and broccoli in boiling water for a while. Drain water and set aside in a baking dish. Read Note Below **
(3) Add all other ingredients to the baking dish, sprinkle with some salt, black pepper and olive oil, mix all the ingredients.
(3) Oven grill at 200 degree C for 20 minutes or until desired browning.

Note : I prefer to scald broccoli and cauliflower in boiling water for a while, and oven grill for shorter time to retain the crunchiness of all vegetables.
