Stuffed Portobello Mushrooms Recipe

I love different types of mushrooms and I cook with mushrooms a lot. They are  versatile food that I often simply sautéed with mince garlic, stir fried with vegetables, grilled with salad, roasted for pizza and deep fried tempura.

I love Portobello mushrooms because they are meaty and are perfect for stuffing.

Ingredients :

• Mini Portobello
• Yellow and Green Bell Pepper (Diced)
• Cherry tomatoes (Diced)
• Onion (Diced)
• Garlic (minced) : 2 tbsp
• Tomato Sauce : 4 tbsp
• Shredded Mozzarella Cheese
• Extra Virgin Olive Oil : 2 tbsp
• Black Pepper
• Salt and Seasoning (to taste)

Method :
(1) Wipe the Portobello mushrooms clean and remove the stems. Dice bell peppers, onions and cherry tomatoes.

(2) Heat up pan with 2 tbsp of olive oil, sauté garlic until fragrant, add in all vegetables, stir fry and mix them, stir in tomato sauce, black pepper, salt and seasoning to taste, stir fry and mix evenly and set aside.

(3) Sprinkle olive oil on baking tray.

(4) Fill in each Portobello mushroom with the fried vegetable ingredients.

(5) Top with shredded Mozzarella Cheese. Bake at 250 degree C for 15 minutes or until desired browning.
