Crispy Fried Yellowtail Fish With Sambal Sauce Served on Banana Leaf Recipe

Hello, happy to share with You crispy fried yellow tail fish with sambal sauces served on banana leaf.
Banana leaf  has an aroma when hot food is place on it.  Dishes served on banana leaf makes food more fragrant and appetizing.
I savor this crispy fried fish with fragrance coconut rice and my home-made spicy sambal sauce on banana leaf.  It is very appetizing,  flavorful and savory.


Yellow tail fish : 230 grams
Sambal Sauce
Banana leaf
Cherry Tomatoes and Cucumber (Optional, may add other veggie to your liking)
Cooking oil (enough for deep frying)
Corn Flour

Cooking this dish :

  • Use boiling water to soak the banana leaf until it is soft. Wipe it dry and set aside on a plate.
  • After cleaning the fish, marinate it with some salt.
  • Before deep frying, cover the fish with corn flour.
  • Heat up cooking oil, deep fry fish until golden brown on both sides. Drain oil and place the fish onto the plate with banana leaf.

Home-made Sambal Sauce Recipe


Ingredients to be blended :
10 shallots
5 cloves of garlic
10 pieces of candle nut
1/2 stalk of lemon grass
Ginger : 20 grams
Blue ginger : 10 grams

Other ingredients: –
Chili paste : 3 tbsp
Raw Sugar : 2 tbsp
Salt (to taste)
Vegetable seasoning (to taste)
Cooking oil 1 cup

Cooking Sambal Sauce:
(1) With water half fill the ingredients, blend them into paste.
(2) Heat up pan with 1 cup of oil, add in the blended paste and chili paste, stir and mix all ingredients evenly. Stir once a while.
(3) Once the oil is separated from the ingredients and there is no raw smell, add in raw sugar, some salt and seasoning to taste.
(4) Let it cool and store in glass container before it is refrigerated.

Fragrant Coconut Rice Recipe

Ingredients :
– Coconut Cream Powder : 400 grams 
– White Rice : 350 grams
– Water :400 grams (adjust according to the type of rice used)
– A few Pandan leaves

Cooking Coconut Rice

  • Wash rice, drain well.  Add in Coconut Cream Powder and water, mix well, add in the Pandan Leaves and cook rice.
  • When the rice is almost cooked, fragrant of coconut and pandan will fill your kitchen.
